The process whereby a relatively unspecialized cell acquire specialized structural and/or functional features of an epithelial cell of the salivary gland. The developmental process, independent of morphogenetic (shape) change, that is required for an epithelial cell of the salivary gland to attain its fully functional state. The process whose specific outcome is the progression of the salivary gland over time, from its formation to the mature structure. Salivary glands include any of the saliva-secreting exocrine glands of the oral cavity. The process whereby a relatively unspecialized cell acquires specialized structural and/or functional features that characterize the cells of the salivary gland. The process whereby relatively unspecialized cells, e.g. embryonic or regenerative cells, acquire specialized structural and/or functional features that characterize the cells, tissues, or organs of the mature organism or some other relatively stable phase of the organism's life history. Differentiation includes the processes involved in commitment of a cell to a specific fate and its subsequent development to the mature state.
