Any process that modulates the frequency, rate or extent of eosinophil differentiation. Any process that stops, prevents or reduces the frequency, rate or extent of eosinophil differentiation. The process whereby a relatively unspecialized myeloid precursor cell acquires the specialized features of any cell of the myeloid leukocyte lineage.
